Cranberry & Butternut Holiday Bake

Serves: 6-8 servings
- 1 ¼ cup fresh cranberries
- 4 cups cubed butternut squash
- 1 cup (1/2 large) chopped apple
- ⅛ cup pumpkin seeds
- ½ tsp cinnamon
- ½ tsp turmeric
- ¼ tsp cardamom
- ¼ tsp cloves
- ½ tsp nutmeg
- ½ tsp salt
- 2 Tbsp olive oil
- 1 Tbsp honey
- Preheat oven to 350 degrees.
- Mix all ingredients in a 9x13 baking dish, cover loosely with foil and bake for 30 minutes.
- Uncover and bake for another 10 minutes, or until the edges of the squash are browning.
